Hand picked over 2 days the fruit was partially de-stemmed with 50% whole bunch inclusion. Fruit was pressed in a basket press once the indigenous yeast had finished fermenting out the sugar after 3 weeks. The finished wine was allowed to rest in neutral french oak barriques for 7 months before bottling.
